Blueberry Muffin Cake
This is a muffin in a cake pan and it’s wonderful! It has the texture of a perfect blueberry muffin in whatever size piece is cut. The recipe calls for chopping the blueberries but I left mine whole because I love the pop of molten hot fruit that would be lost with chopping. Like all the cakes in the One-Bowl Bakes chapter, this cake comes together quickly. I think cranberries could easily be substituted in the fall.
