Maple Orange Carrot Cake
I need to start by admitting that I would say I am not a fan of carrot cake but will also admit that I have only tried it once before. This Maple Orange Carrot Cake is absolutely magnificent. I was nervious about the called for pinch of ground cloves. I didn’t want to be too heavy handed but ended up adding just the slightest to the finished cake. This tells me that my pinch was the right amount! Like all the cakes in this first chapter – One-Bowl Bakes – the cake comes together quickly and bakes in a single layer ready for the maple icing in no time at all. The orange liqueur in the cake (along with the ground cloves) and the maple in the icing work very well with each other.
